Have you ever made cookies with kids?

Indiana Caravan 2011: A Recipe from Belinda…

Along with being a science educator, our Director of Curriculum Customer Support, Belinda Basca is a serious baker. Good enough, actually, that she considered opening her own bakery. We grabbed before she could, but she agreed to share some recipes with you this week…

Lemon Bars

___

Ingredients

  • 2 cups flour
  • ½ cup powdered sugar
  • 1 cup butter, room temperature

Mix above and press into and up the sides of a 13 x 9 in pan. Bake 20 minutes at 350 degrees.

Icing Ingredients

  • 2 cups sugar
  • 4 eggs
  • ~10-12 tablespoons fresh lemon juice (this is the doubled amount I recommend)
  • 4 tablespoons flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Mix above and pour over the baked crust. Bake 20-25 minutes or until just golden on top.

Once cooled, sprinkle lightly with powdered sugar.
